Ingredients
For the Cake:
- 2 cups all-purpose flour
- 1 ½ cups granulated sugar
- 2 large eggs
- 1 tsp baking soda
- ½ tsp salt
- 1 tsp vanilla extract
- 1 can (20 oz) crushed pineapple with juice (do not drain)
- ½ cup unsweetened shredded coconut (optional)
- ½ cup chopped walnuts or pecans (optional)
For the Cream Cheese Frosting:
- 8 oz cream cheese, softened
- ¼ cup unsalted butter, softened
- 2 cups powdered sugar
- 1 tsp vanilla extract
- 2-3 tbsp milk (as needed for consistency)
- ¼ cup shredded coconut for garnish (optional)
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking pan or line it with parchment paper.
- In a large mixing bowl, combine the flour, sugar, baking soda, and salt.
- Add in the eggs, vanilla extract, and the entire can of crushed pineapple with juice. Mix until well combined. If using, fold in the shredded coconut and chopped nuts.
- Pour the batter into the prepared baking pan, spreading it out evenly.
- Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
- Remove from the oven and let it cool completely in the pan.
- In a medium bowl, beat together the softened cream cheese and butter until smooth and creamy.
- Gradually add the powdered sugar, beating until fully combined and smooth.
- Mix in the vanilla extract. If the frosting is too thick, add milk, one tablespoon at a time, until you reach the desired consistency.
- Once the cake has completely cooled, spread the cream cheese frosting evenly over the top.
- Garnish with shredded coconut if desired.
- Slice the cake into squares and serve. Store any leftovers in the refrigerator for up to 5 days.
