First of all, I love your food and I find you to be eloquent and well spoken, I would never have guessed you are so young! Good woman!
I have a question about vegan cheese and/or cheesecake. I have tried to make these on a number of occasions with soaked cashews or almonds, but it never comes out smooth and creamy as it should. I’m wondering if it is because I do not have a newer, stronger food processor or perhaps I need to soak the nuts longer? I think next time I might soak, process and theeeen use mortar and pestle?

Hi Dayna! Thank you so much! My blender is definitely not a new or impressive model so I take some extra steps with mine. First I would crush the nuts in a mortar and pestle before you soak them. I always soak mine overnight. When it comes to blending, I split the cashews into thirds and blend a small amount at a time. I don’t think mine are ever as super smooth as some I’ve seen but they’re close enough to still taste great!
