Ingredients

  • For the Cookies:
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar, packed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup apple cider, reduced to 1/4 cup (instructions below)
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg

For the Cinnamon Sugar Topping:

  • 1/4 cup granulated sugar
  • 1 teaspoon ground cinnamon

Instructions

  1. Reduce the Apple Cider: Pour 1/2 cup of apple cider into a small saucepan and simmer over medium heat, stirring occasionally, until it reduces to 1/4 cup. Set aside to cool.
  2. Preheat the Oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
  3. Mix Wet Ingredients: In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy. Add the egg, vanilla extract, and the reduced apple cider, and mix until well combined.
  4. Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
  5. Combine Wet and Dry Ingredients: Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix the dough.
  6. Form the Cookies: Using a cookie scoop or tablespoon, roll the dough into balls and place them on the prepared baking sheet, spacing them about 2 inches apart.
  7. Prepare the Cinnamon Sugar Topping: In a small bowl, mix together the granulated sugar and cinnamon. Roll each dough ball in the cinnamon sugar mixture to coat.
  8. Bake the Cookies: Bake in the preheated oven for 10-12 minutes, or until the edges are set and the tops are lightly golden. The cookies will still be soft in the center but will firm up as they cool.
  9. Cool and Serve: Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely. Enjoy your apple cider cookies with a cup of tea or hot apple cider!
